Ever cooked vegetables yourself? Well then you know that spinach for example looks very big in the bag, but when you start to cook it, it shrinks because the moisture gets extracted. Leaving fewer amount of spinach after cooking, but the same amount of amazing nutrients. Same applies to our veg & fruit, the percentages you see on pack are the percentages after cooking, but this does not equal the weight of fruit and veg that goes into the recipe. That's the beauty of fruit & veg, you don't need much to get a whole lot from them in return.
